Raspberry & cardamom lassi

A lassi is a refreshing yogurt drink popular in South Asia. This makes a winning breakfast smoothie – use vanilla seeds or a pinch of cinnamon instead of the cardamom if you prefer.

Ingredients

  • 3 cardamom pods
  • 160g frozen raspberries
  • 1 tbsp mild-flavoured honey
  • 300g low fat natural yoghurt
  • 50ml skimmed milk
  • 50g crushed ice

Method

  1. Put 2 x 175ml glasses in the freezer to chill for 10 minutes. Meanwhile, bruise the cardamom pods with a rolling pin and shake out the seeds. Crush these in a pestle and mortar or with a rolling pin on a chopping board.

  2. Put the crushed seeds in a blender with the frozen raspberries (reserving 4 to serve), honey, yogurt, milk, a tiny pinch of salt and the crushed ice. Blend on high speed for about 2 minutes until bright pink and smooth. Divide between the chilled glasses and top with the reserved raspberries.
