Red cabbage & sausage pasta

Ingredients

  • 2 tbsp extra virgin olive oil
  • 400g pack pork sausages
  • 1 onion, finely chopped
  • 3 clove/s garlic, finely grated
  • 1½ tsp fennel seeds
  • 1 tbsp red wine vinegar
  • ½ red cabbage, sliced
  • 300g pasta (such as rigatoni or orecchiette)
  • 4 tbsp crème fraîche
  • 50g Parmigiano Reggiano, finely grated

Method

  1. Put 1 tbsp oil in a wide frying pan over a medium-high heat. Once hot, squeeze the sausagemeat from its skins into the pan and break up into pieces with a wooden spoon. Fry for 5-7 minutes until browned, then remove with a slotted spoon and set aside.

  2. Lower the heat and add the remaining oil with the onion and a pinch of salt. Fry gently for 10 minutes, then add the garlic and fennel seeds and cook for 2 minutes. Deglaze the pan with the vinegar, scraping up the bits from the bottom. Add the red cabbageand cook for 5 minutes until softened.

  3. Cook the pasta according to the shortest time on the pack instructions. Use a slotted spoon or tongs to lift the cooked pasta directly into the cabbage pan. Add the crème fraîche, most of the cheese and a ladleful of pasta water, tossing to combine. Serve with the remaining cheese and a generous grinding of black pepper. Some dill fronds sprinkled on topare lovely too, if you have some to hand.
