Ingredients

  • 4 rashers essential Waitrose unsmoked back bacon
  • 1 essential Waitrose ripe avocado
  • ½ tbsp essential Waitrose half fat mayonnaise
  • 1 essential Waitrose lime
  • ½ 25g pack parsley, chopped
  • 2 wholemeal bagels, halved and toasted

Method

  1. Cook the bacon under a preheated grill for 5-6 minutes, turning once until completely cooked.

  2. Meanwhile, scrape the avocado flesh into a small bowl and smash with a fork to give a chunky texture. Stir in the mayonnaise, juice of half a lime and half the parsley, season and spread onto the toasted bagels.

  3. Top with the bacon and sprinkle with remaining parsley. Serve with the other half of the lime.
