Ingredients

  • 4 large baking potatoes or 4 medium-large sweet potatoes

Method

  1. Preheat the oven to 200ºC, gas mark 6. Pierce each potato all over with a fork. Cook them together in the microwave for 10 minutes, until becoming tender.

  2. When cool enough to handle, rub the potatoes with a little oil and a good pinch of salt. Bake for 20-30 minutes, until the skin is golden and crisp and the middles are soft and fluffy.

  3. Open out the potatoes by making a criss-cross incision at the top of each one. Push the sides gently inward. Add a knob of butter or just go straight in with your filling.

Cook’s tip

Cook the potatoes in the microwave the day before, then cool and chill until you’re ready to bake.
