Ingredients
3 x 400g Waitrose Duchy Organic Free Range Chicken Wings, tips removed, wings cut in ½
2 cloves garlic, finely grated
1 tbsp Bart Creole Seasoning
¼ tsp ground nutmeg
2 tbsp olive oil
280g pack mango chunks
2 tbsp mango chutney
1 red chilli, deseeded and roughly chopped
1 lime, juice
Method
Put the chicken wings in a bowl and add the
garlic, Creole seasoning, nutmeg, olive oil, and
½ tsp each of salt and black pepper. Mix well,
cover and chill overnight in the fridge.
Preheat the oven to 200ºC, gas mark 6
and line a baking tray with parchment. Spread
the wings over the tray and cook for 20-25
minutes, until thoroughly cooked, the juices
run clear and there is no pink meat.
Meanwhile, put the mango chunks, chutney,
chilli and lime juice in a blender and blitz until
smooth. Season.
Remove the chicken from the oven and brush
over the mango sauce. Return to the oven, or
finish off on a hot barbecue, or under the grill,
for 2-3 minutes. Turn the wings over, brush with
the sauce again and grill for 2-3 minutes more.
Cook’s tip
Wing tips make great stock and can be kept frozen for up to 3 months.
