Put the chicken wings in a bowl and add the garlic, Creole seasoning, nutmeg, olive oil, and ½ tsp each of salt and black pepper. Mix well, cover and chill overnight in the fridge.
Preheat the oven to 200ºC, gas mark 6 and line a baking tray with parchment. Spread the wings over the tray and cook for 20-25 minutes, until thoroughly cooked, the juices run clear and there is no pink meat. Meanwhile, put the mango chunks, chutney, chilli and lime juice in a blender and blitz until smooth. Season.
Remove the chicken from the oven and brush over the mango sauce. Return to the oven, or finish off on a hot barbecue, or under the grill, for 2-3 minutes. Turn the wings over, brush with the sauce again and grill for 2-3 minutes more.
Wing tips make great stock and can be kept frozen for up to 3 months.
