Texan-style steak & corn salad

A brilliant way to kick-start barbecue season. If the weather isn’t holding up, this is just as good cooked on the griddle indoors.

Ingredients

  • 500g British Ruby Gem potatoes, cut into 1cm slices
  • 2 Essential Sweetcorn
  • 2 x 300g thick-cut sirloin steaks
  • 2 tbsp olive oil
  • 5 shakes Cape Herb & Spice Texan Steakhouse Seasoning, plus extra to serve
  • 2 courgettes, sliced on the diagonal

Dressing

  • 2 tbsp chopped chives
  • 2 tbsp Greek-style natural yogurt
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp cider (or white wine) vinegar
  • Sprinkling Cape Herb & Spice Texan Steakhouse Seasoning

Method

  1. Prepare and light a barbecue or heat a griddle pan over a high heat. Bring a large saucepan of salted water to the boil, add the potatoes and sweetcorn, then simmer for 6 minutes. Drain and set aside. Meanwhile, brush the steaks all over with a little of the oil. Season on both sides with some salt and a generous shake of the Texan seasoning; set aside.

  2. When the barbecue or griddle pan is hot, cook the steaks for 3 minutes on each side or until browned all over and cooked to your liking. Set aside to rest. Meanwhile, set aside 1 tbsp chives, then mix all the dressing ingredients with a pinch of salt. Toss the corn, potatoes and courgettes in the remaining oil and season. Barbecue or griddle for 1-2 minutes on each side, until charred.

  3. Carefully slice the corn kernels off the cobs and put in a bowl with the potatoes and courgettes; toss together, then divide between plates. Thickly slice the steaks and arrange over the veg. Drizzle with the dressing, scatter over the reserved chives and a final shake of the seasoning, then serve.

Cook’s tip

Texan Steakhouse Seasoning

With garlic, coriander seeds, chilli flakes and paprika, this is a handy summer all-rounder for the barbecue. It makes a great rub for steak or prawns, or sprinkle it over buttered green veg.
