Vietnamese-style prawn baguette

This recipe is inspired by bánh mì – a classic Vietnamese sandwich of pâté (traditionally pork), tangy pickled vegetables and aromatic herbs.

Ingredients

  • 2 tbsp rice vinegar
  • 2 small carrots, peeled and cut into matchsticks
  • 4 radishes, finely sliced
  • 2 small baguettes
  • 2 tbsp sriracha mayo sauce
  • 2 tbsp crab pâté
  • 130g pack garlic & chilli king prawns
  • ½ x 25g pack coriander, leaves only

Method

  1. In a bowl, mix the rice vinegar with a pinch of salt and stir in the carrots and radishes; set aside for 10 minutes to quick-pickle.

  2. Slice the baguettes in ½ lengthways. Spread the sriracha mayonnaise sauce over the top ½ and the crab pâté on top of the bottom ½. Drain the carrots and radishes from the vinegar and arrange on top of the pâté, then arrange the prawns on top and scatter with the coriander leaves. Sandwich with the top of the baguettes, then cut in ½ and serve.

Cook’s tip

Leftovers, Crab pâté 

Toss with spaghetti, parsley, lemon zest and chilli for a cheat’s crab pasta.
