Ingredients

  • 225g Waitrose Pome Dei Moro Tomatoes, finely chopped
  • ¼ x 25g pack coriander, finely chopped, plus extra leaves to serve
  • ¼ clove/s garlic, crushed
  • ½ red chilli, finely chopped
  • 1 unwaxed lime, zest and juice of 1/2, the rest in wedges
  • 1 avocado, mashed
  • 16 mini poppadoms
  • 220g pack Waitrose Extra Large King Prawns

Method

  1. Mix the tomatoes, coriander, garlic, chilli and lime zest in a bowl; season. Mix the avocado and lime juice in another bowl; spoon onto the poppadoms. Top each with a prawn and then the tomato mixture. Scatter with extra coriander leaves; serve at once with lime wedges for squeezing.
