    Avocado ‘mayo’

    Makes: 300ml (approx)


    2 Waitrose 1 Perfectly Ripe Avocados, peeled and stones removed
    1 tsp Dijon mustard
    1 tbsp lemon juice, plus extra to taste
    ¼ tsp sea salt, plus extra to taste
    Pinch of cayenne pepper, plus extra to taste
    6 tbsp avocado oil


    1. Place the avocado, mustard, lemon juice, salt and cayenne into a food processor, and blend until smooth.

    2. With the motor running, slowly trickle in enough oil to form a very smooth, thick mixture. Adjust the seasoning with lemon juice, salt and cayenne and serve straight away. Delicious with prawns for dipping, as an accompaniment for meats and fish, or spread on sandwiches, wraps and rolls.
