    Cauliflower Cheese with Bacon

    Serves: 2 - 3


    • 425ml milk
    • 1 bay leaf
    • 3 black peppercorns
    • 35g butter
    • 35g plain flour
    • 85g gruyère
    • A pinch of English mustard
    • 1 cauliflower
    • Diced onion
    • Diced bacon


    1. Preheat oven to 220°C/gas mark 7.
    2. Put 425ml milk in a pan with a bay leaf, 3 black peppercorns and 1/2 onion. Bring to the boil, then cover, remove from the heat and stand for 20 minutes.
    3. Melt 35g butter in a pan, mix in 35g plain flour, cook for a minute, then stir in the strained milk. Simmer for 5 minutes, then add 85g gruyère and a pinch of English mustard. Season to taste.
    4. Boil the florets of one cauliflower for 2-3 minutes, or until tender. Drain and arrange in a gratin dish. Sprinkle with sautéed, diced onion and bacon. Pour over the sauce and bake for 10 minutes.
