    Roast veggie moussaka

    350g baby potatoes, cut into 0.5cm thick slices
    1 tbsp vegetable oil
    750g bag frozen essential Waitrose Grilled Vegetable Mix
    400g can essential Waitrose Chopped Tomatoes
    250g essential Waitrose Greek Style Natural Yogurt
    1 essential Waitrose Free Range Egg, beaten
    50g Cheddar, grated


    1. Preheat the oven to 220ºC, gas mark 7.

    2. Boil the potatoes for 8-10 minutes, until just tender, then drain.

    3. Meanwhile, heat the oil in a large frying pan and fry the vegetable mix for 5 minutes. Add the tomatoes and cook for 2 minutes. Transfer to a shallow ovenproof dish, top with a single layer of potatoes, then season.

    4. Mix the yogurt, egg and some seasoning together, and spread over the potato layer. Sprinkle with the cheese and bake for 15-20 minutes until golden.
