    Carrot and Celeriac Mash

    Serves: 8


    • 1 tbsp flat leaf parsley, chopped
    • 50g butter, plus butter to serve
    • 1kg celeriac, peeled and cut into chunks
    • 1.5kg carrots, peeled and cut into chunks


    1. Place 1.5kg carrots and 1kg celeriac, peeled and cut into chunks, in a large pan. Cover with cold water and bring to the boil.
    2. Simmer for 15-20 minutes until tender.
    3. Drain and return to the pan. Add 50g butter and mash. Season and serve, sprinkled with 1 tbsp flat-leaf parsley, chopped, and a knob of butter.
