Chicken & barley soup with chestnuts

1 tbsp oil
418g pack chicken breast chunks
1.2 litre chicken stock
75g Love Life Quick Cook Barley Mix
3 tomatoes, chopped
1 bunch salad onions, sliced
1 courgette, diced
180g pack cooked chestnuts, roughly chopped
½ x 25g pack parsley, chopped
1. Heat the oil in a saucepan and fry the chicken for 5 minutes. Add the stock and barley mix, cover and simmer for 12-15 minutes until the chicken is cooked through with no pink meat.
2. Add the tomatoes, salad onions, courgettes and chestnuts. Cook for 5 minutes. Stir in the parsley and serve.
