    Chicory, crab & watercress salad

    Chicory, crab & watercress salad

    100g Waitrose Love Life Wholewheat Couscous
    1 head chicory, shredded
    100g bag watercress, thick stalks removed
    Juice of 1 lemon
    1 tbsp extra virgin olive oil
    150g cherry tomatoes, halved
    200g white crab meat 


    1. Place the couscous in a small bowl and add boiling water to just cover it. Cover the bowl with clingfilm and leave for 5 minutes before fluffing up with a fork.

    2. Mix the couscous with the chicory and watercress. Whisk together the lemon juice and oil, season and pour into the salad. Place on a large serving platter and scatter over the tomatoes and crab meat.
