    Easy poached pears

    Serves: 4


    4 conference pears, peeled, halved and cored
    750ml pressed apple juice
    1 cinnamon stick
    4 tbsp fat free greek yogurt
    20g Waitrose LOVE Life pistachios, chopped


    1. Put the pears in a saucepan with the apple juice and cinnamon stick. Bring to the boil, then turn down to a simmer and poach for 15 minutes.

    2. Remove the pears from the cooking liquor, then turn up the heat and boil for 8-10 minutes until thick and syrupy. Mix 2 tbsp of the reduced liquor with the greek yogurt, then serve with the pears. Sprinkle with the chopped pistachios and spoon over a little more cooking liquor, if liked.
