    Tommy Banks' Roasted shallots

    • Preparation time: 5 minutes
    • Cooking time: 15 minutes
    • Total time: 20 minutes

    Serves: 4 as a side

    Ingredients

    ½ tbsp olive oil
    2 echalion shallots, cut in half lengthways (unpeeled)

    Method

    1. Preheat the oven to 180˚C, gas mark 4. Put the oil in a heavy-based ovenproof frying pan with the shallots, cut side down, and cook for 2-3 minutes over a medium heat until they begin to sizzle. Transfer to the oven and cook for 10 minutes, until soft and caramelised. Peel the shallots and serve.
