Apple, cardamom & tahini porridge

Give your morning porridge an autumn makeover with these apple-stacked oats, topped with a drizzle of nutty tahini. The apples are roasted with cardamom and honey which balances beautifully with the toasty tahini – now that’s something worth getting up for. Ingredients

  • 2 Best of British Apples
  • ½ unwaxed lemon, zest and juice
  • 175g porridge oats
  • 650ml milk (or alternative of choice), plus extra if needed
  • 2 tbsp ground flaxseeds
  • 2 tbsp tahini
  • 2 tbsp toasted flaked almonds

For the roasted apples

  • 4 Best of British Apples
  • 15 cardamom pods, seeds crushed
  • 1 tbsp clear honey

Method

  1. For the roasted apples, preheat the oven to 200°C, gas mark 6. Core and finely slice the 4 apples, arrange on a large baking tray, then put in the oven for 5 minutes until starting to soften. Scatter over the crushed cardamom seeds and drizzle with the honey. Add a pinch of salt, turn to coat, then roast for 15-20 minutes more until turning golden. Cool for a few minutes, then transfer to a food container, cool completely and chill until needed (up to 3 days).

  2. When ready to serve, grate the remaining 2 apples into a bowl with the lemon juice and a pinch of salt and mix well. Put the oats, milk, flaxseeds and a pinch of salt in a large pan. Bring to a simmer, then add the apple mixture. Cook over a low heat for 3-4 minutes, stirring, until thickened and the oats are tender, adding a bit more milk if needed. Spoon into bowls, then top with a drizzle of tahini, some roasted apples, the flaked almonds and lemon zest, plus an extra drizzle of honey, if you like.
