Honey & sriracha salmon traybake

Honey & sriracha salmon traybake

Need a quick weeknight dinner? This speedy 30-minute noodle traybake couldn't be easier and certainly doesn't skimp on flavour. Combine sriracha and honey to make a sweet and spicy marinade that caramelises beautifully on the salmon, though it works just as well with chicken or pork. Ingredients

  • 2 tsp Rowse Dark & Rich Honey
  • 1 tbsp Cooks’ Ingredients Sriracha
  • 1 clove/s garlic, finely grated
  • 1½ tbsp light soy sauce
  • 2 Scottish salmon fillets, skin removed
  • 2 x 210g packs sweet & tender vegetable stir fry
  • 2 tbsp toasted sesame oil
  • 275g pack ready cooked rice noodles
  • 1 tsp black sesame seeds

Method

  1. Preheat the oven to 220ºC/200ºC fan/gas 7. Mix the honey, sriracha, garlic and ½ tbsp soy sauce in a bowl. Add the salmon and turn to coat in the mixture. Cover and chill until needed.

  2. Put the vegetable mix in a roasting tin with the remaining 1 tbsp soy sauce and the sesame oil. Toss together and roast for 5 minutes.

  3. Stir the rice noodles and 3 tbsp water into the roasting tin with the vegetables. Sit the salmon on top, spooning over any excess marinade. Scatter the salmon and noodles with the sesame seeds and roast for 12-15 minutes or until the salmon is opaque and flakes easily with a fork. Serve straight away.

Cook’s tip

Simple swap
Use a pack of ready-made egg fried rice instead of the noodles, adding it at the start with the veg and making sure it's piping hot before serving.

And to drink...
