Meet the maestros

The rich, golden dark Reserva Exclusiva is made by master rum-makers, known as maestros roneros, in the independent, family-owned Diplomático distillery at the foot of the Andes in Venezuela. The rums are made from sugar-cane molasses and sugar-cane honey, with 100% of the liquid waste used as an organic fertiliser in the cane fields or to feed the buffalos... whose milk makes the most amazing mozzarella

Under the watch of its first female Bajan master blender, Trudiann Branker, Mount Gay is firmly focused on the future – combining modern science with the distillery's 300 years of rum expertise. She's already pioneered a change to the way Black Barrel is made, by extending its finishing period in deeply charred bourbon casks from four weeks to six months

The spirit of Jamaica

Similar to how wines reflect their terroir, the Appleton Estate 8-Year-Old Reserve Rum captures the variety of sugar cane, the forested limestone hills and the blue water springs of the Nassau Valley. Master blender Joy Spence suggests trying it in her cocktail: mix 30ml with 90ml ginger ale, 5 drops of Angostura Bitters, pour over ice in a highball glass and garnish with orange slices
