    Jordan Bourke's Lime and chilli butter

    Makes: 250g


    250g salted butter, softened
    2 limes, zest of 2 and 1 tbsp juice
    1 red Thai chilli, deseeded and finely chopped
    1 tsp chilli flakes
    1 garlic clove, crushed


    1. Put all the ingredients in a bowl and beat with a wooden spoon until combined. Cover and chill until needed. This butter is particularly delicious with fish; just add a knob to a pan towards the end of the cooking time and spoon over the fish.
