Pernod

Pernod is actually a brand of pastis, the popular French liqueur which is often served as an aperitif or with water as a long, cool drink. It has a very distinctive aniseed flavour and is a clear, colourless liquid. The name pastis is a dialect French word for hazy or unclear - this is explained by the fact that when mixed with water pastis goes cloudy. Pernod can also be mixed with fruit juices, particularly grapefruit or fruit cordials - blackcurrant is a popular choice to make Pernod and black.
