Garlic, lemon and olive oil mash

Serves: 6
1kg Desiree potatoes
1 unwaxed lemon
1 small clove garlic, crushed
50–75ml extra virgin olive oil, eg Waitrose 100% Italian, plus extra to serve
75ml single cream or milk
1. Peel the potatoes and cut into large chunks. Place into a pan of cold, lightly salted water and bring to the boil. Simmer for 15 minutes or until tender. Drain thoroughly and return to the pan. Mash thoroughly until smooth.
2. Finely grate the zest of the lemon and set aside. Add 1 tablespoon of lemon juice to the potatoes together with the garlic, olive oil, cream or milk, and seasoning. Beat well until combined and creamy.
3. Spoon into a warmed serving dish, swirl over some extra olive oil and sprinkle with the lemon zest and extra black pepper before serving.
