    Mackerel, feta & beetroot salad

    Serves: 4


    300g Waitrose Miniature New Potatoes
    310g pack essential Waitrose Peppered Smoked Mackerel Fillets
    250g Waitrose Baby Beetroot
    100g essential Waitrose Greek Feta
    100g bag watercress
    25g pack chives
    20g pumpkin seeds, optional
    essential Waitrose Greek Style Yogurt, to serve


    1. Cook the new potatoes in boiling water for 10-12 minutes, or until tender. Once cooked, drain the potatoes and cut them
    into halves. Meanwhile, remove the skin from the mackerel fillets and flake into bitesize pieces.

    2. Cut the beetroot into quarters and set aside. Break the feta into bitesize pieces.

    3. Place the watercress on a large serving plate with the prepared potatoes, beetroot and feta. Scatter over the flaked mackerel. Snip over the chives, add the pumpkin seeds if using, and serve with the Greek yogurt.
