Ingredients

  • 2 tbsp olive oil
  • 500g pack Waitrose Chicken Drum Fillets
  • 2 red onions, finely sliced
  • 2 cloves garlic, finely sliced
  • 1 mild red chilli, finely sliced
  • 200ml chicken stock
  • 50g raisins
  • ½ tsp clear honey
  • 3 tbsp balsamic vinegar
  • 2 x 250g packs microwaveavle brown, red and wild wholegrain rice
  • ¼ x 25g pack flat leaf parsley, chopped
  • Large handful wild rocket

Method

  1. Heat the oil in a large frying or sauté pan over a high heat. Cut the chicken into bitesized pieces, trimming any excess sinew as you go. Season and fry for 4-5 minutes, turning regularly, until golden. Lift out of the pan and set aside.

  2. Turn the heat down to medium and fry the onions, garlic and chilli with a pinch of salt for 6-7 minutes until softened. Return the chicken to the pan and add the stock, raisins, honey, vinegar and a grind of black pepper. Simmer gently for 8-10 minutes until the chicken is cooked through with juices running clear and no pink meat, and coated in a sticky dressing. Set aside off the heat for 5 minutes.

  3. Meanwhile, heat the grain pouches according to pack instructions, then stir through the chicken with the parsley. Serve with a handful of rocket.

Cook’s tip

Level up
Throw 1 tbsp of capers into the sauce along with the raisins for a salty hit to contrast with the sweetness of the dried fruit.
