Baked butter beans with feta & chorizo

These creamy beans are packed in a smoky sauce that’s effortlessly thickened by finely crumbled feta. Satisfying enough for a weekend brunch or midweek lunch, each serving contains more than 25g of protein and 15g fibre.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 clove/s garlic, finely chopped
  • 1 red pepper, diced
  • 40g Cooks’ Ingredients Chorizo Crumb
  • 400g can Essential Butter Beans
  • ½ x 25g pack flat leaf parsley, leaves roughly chopped
  • 20g feta, finely crumbled
  • 2 classic vine tomatoes, thinly sliced
  • 4 slice/s multi-seeded farmhouse bread

Method

  1. Heat the oil in a small pan. Cook the onion and garlic for 5 minutes. Add the pepper and most of the chorizo crumb, then cook for 5-10 minutes more until the peppers are tender.

  2. Stir in the butter beans and their water to gently warm through. Stir in the parsley and season with black pepper.

  3. Preheat the oven to 200ºC, gas mark 6. Tip the beans into a small ovenproof dish, then stir in most of the feta.

  4. Arrange the tomato slices over the beans, then sprinkle over the reserved chorizo and feta. Bake for 15 minutes, until the tomatoes have softened and the beans are bubbling, then serve with the bread, toasted.

Cook’s tip

The tomatoes release their sweet juices into the sauce during baking, so may need a stir before serving. This is a good recipe for the air fryer too – cook at 190ºC or until hot throughout and golden.
