Prawn, chilli & almond spaghetti

Ingredients

  • 180g spaghetti
  • 3 tbsp extra virgin olive oil
  • 30g toasted flaked almonds
  • 3 clove/s garlic, chopped
  • 1 pinch/es chilli flakes
  • ½ x 25g flat leaf parsley, chopped
  • 220g Waitrose & Partners cooked Extra Large King Prawns
  • ½ lemon, juice
  • 235g pack baby spinach

Method

  1. Bring a large saucepan of salted water to the boil. Add the spaghetti and simmer for 1 minute less than pack instructions.

  2. Meanwhile, heat the oil in a large frying pan over a medium heat. Add the almonds and garlic with a pinch of salt and fry for 2-3 minutes until golden. Stir in the chilli fl akes and parsley, then fry for a minute more, before stirring in the prawns. Season and stir over the heat for 1-2 minutes, then add the lemon juice.

  3. Scoop out a small cupful of the pasta cooking water. Tip the spinach into a colander, then drain the pasta over it to wilt. Tip the spaghetti and spinach into the frying pan and toss everything together over the heat, adding a splash of the cooking water to loosen, if needed. Divide between plates and serve with a sprinkling of Parmigiano Reggiano, if you like.
