    Kale & chickpea Waldorf salad

    70g Waitrose Duchy Organic Walnuts
    2 tbsp olive oil
    1 tbsp white wine vinegar
    1 tbsp Dijon mustard
    1 ½ tbsp Waitrose Duchy Organic Mayonnaise
    ½ x 180g pack Waitrose Duchy Organic Kale, thick stems removed, washed and dried
    2 stalks Waitrose Duchy Organic Celery, cut into 3mm slices
    1 Waitrose Duchy Organic Gala Apple, cored and diced
    400g can Waitrose Duchy Organic Chickpeas, drained and rinsed
    50g Waitrose Duchy Organic Raisins


    1. Place the walnuts in a dry frying pan and warm over a low heat for 4-5 minutes, shaking the pan occasionally, until fragrant and toasted. Remove and roughly chop.

    2. Whisk the oil, vinegar, mustard, mayonnaise and some seasoning together in a small bowl.

    3. Put the kale, celery, apple, chickpeas, raisins and toasted walnuts into a large salad bowl. Mix well to combine.

    4. Add the dressing and toss together well. Serve immediately, or store in a sealed container in the fridge until ready to eat, for up to 2 days.
