Golden kiwi jam

Makes: 225g or 1 small jar
1 pack Waitrose 1 3 Perfectly Ripe Golden Kiwi
100g jam sugar
1 tbsp lemon juice, or to taste
1. Peel, quarter, then finely chop the kiwis. Warm the fruit in a medium pan over a low heat. Add the sugar and lemon juice, and continue to warm until the sugar is dissolved. Bring to a simmer and cook for 15 minutes until thickened. Skim off any foam with a spoon.
2. Pour into a small, sterilised jar. Leave to cool completely, then put the lid on and keep in the fridge for up to 3 weeks. Serve with scones, sandwiched in a Victoria sponge, or with toast, crumpets and bagels.
