Brown butter miso, banana & chocolate pudding

Ingredients

  • 75g unsalted butter
  • 2 tsp Cooks’ Ingredients White Miso Paste
  • 2 large ripe bananas
  • 90g full fat Greek yogurt
  • 1 medium free range egg
  • 1 tsp vanilla extract
  • 50g light brown soft sugar
  • 50g caster sugar
  • 80g plain flour
  • 20g cocoa powder
  • ½ tsp bicarbonate of soda
  • ¼ tsp fine sea salt
  • 100g Cooks’ Ingredients Belgian Dark Chocolate, chopped

Method

  1. Preheat the oven to 180ºC, gas mark 4. Melt the butter in a saucepan over a medium heat and cook until it smells nutty and turns deep golden brown. Pour into a bowl, leave to cool for 5-10 minutes, then whisk in the miso until smooth.

  2. In a large bowl, mash the bananas until smooth. Whisk in the yogurt, egg and vanilla, then stir through both sugars. Pour in the brown butter-miso mixture and mix well.

  3. In a separate bowl, sift together the flour, cocoa powder, bicarbonate of soda and salt. Carefully fold into the wet mixture until just combined, then stir through the chopped chocolate.

  4. Pour into a 750ml ceramic ovenproof dish and bake for 40 minutes, or until set around the edges but slightly soft in the centre. Don’t be tempted to over-bake it. Let it stand for 5-10 minutes before serving – ideally warm with a scoop of ice cream, if liked.

Cook’s tip

This is a great way to use up those bananas that have turned too speckled to eat by themselves.
