If you have a jar of Branston in your cupboard or kimchi in your fridge, you probably like things a little picklish – what we’re calling anything with a touch of briny, pickled or fermented character. Picklish recipes include classics such as smash burgers with gherkin-laden sauce and twists like anchovy, cheese and pickle noodles. Many flavour-hero ingredients, from fish sauce and miso to preserved lemons, are part of the picklish squad too – adding zingy acidity and umami depth to dishes.
