Asian sticky ribs

The ribs are fragrant and sticky, and they prove how easy Asian cooking can be.
Serves: 4
1.5kg pork spare ribs
200ml orange juice
80ml dark soy sauce
4 tbsp honey
5cm piece fresh root ginger, peeled and sliced
3 star anise
4 garlic cloves, bruised
1. Preheat the oven to 170°C, gas mark 3. Put the pork spare ribs in a roasting tray. Mix together the orange juice, soy sauce and honey, then stir in the ginger, star anise and garlic. Pour over the ribs and cover with foil. Bake for 2 hours.
2. Remove the foil and increase the heat to 220°C, gas mark 7. Cook the ribs, turning and basting regularly, until golden and bubbling, about 45-50 minutes. Serve with steamed greens and rice.
