Elsbeth's Rich Cheese Straws

Ingredients

200g plain flour
-
salt and freshly ground pepper

a good pinch of English mustard powder

150g cold butter, cubed

150g Cheddar, grated finely

2 eggs, separated
Method

Preheat the oven to 200°C/gas 6. Line 2 baking sheets with baking parchment.

Sieve the flour, seasoning and mustard powder into a large bowl. Add the butter and rub in with your fingertips until the mixture resembles coarse breadcrumbs. Add the finely grated cheese. Add the egg yolks to the flour mixture and mix to a stiff dough.

On a lightly floured board, roll out the dough to a thickness of 5mm. Cut into narrow fingers, about 2 x 10cm. Put on the baking trays. Lightly beat one of the egg whites (you won't need the other) and brush over the cheese straws. Bake for 7-10 minutes until golden, then transfer to a wire rack to cool
