    Pork stroganoff with mushrooms

    Serves: 4


    • 500g pork fillet, trimmed
    • 1½ tsp Bart Smoked Paprika
    • 250g pack Waitrose Leckford Closed Cup Mushrooms, sliced
    • 1 medium onion, finely sliced
    • 200 ml half-fat crème fraîche
    • ½ x 25g pack fresh curly parsley, chopped


    1. Cut the pork into thin strips, dust in paprika and seasoning. Set aside.
    2. Heat a wide frying pan over a medium-high heat. When hot, add the mushrooms and cook, stirring, for 2 minutes. Remove and set aside. Add the onion and 2 tbsp water to the pan and cook, stirring, for 3 minutes, until softened slightly.
    3. Add the pork to the onions. Cook for 2 minutes. Stir in the crème fraîche and simmer for 2 minutes, until the pork is just cooked. Add the mushrooms and their juices, the parsley and some seasoning. Divide between plates and serve with tagliatelle.
