    Prawns with Garlic and Coriander

    This Moroccan speciality has parallels all around the Mediterranean, most using parsley instead of coriander.

    • finely chopped Handful coriander leaves,
    • 3 tbsp extra virgin olive oil
    • 222g packet of frozen, peeled raw prawns, defrosted
    • 3 garlic cloves,
    • chopped 1 lemon, cut into 6 wedges


    1. Heat the oil in a large frying pan, add the prawns and cook for 1 minute. Turn them over, add the garlic and the coriander and cook for a minute more, until the prawns turn pink. Serve them hot with the lemon wedges.
