    Mediterranean seafood salad

    Ever so quick and easy to prepare, but packed with flavours. The secret is a bowl of fresh green salad using more spicy than usual leaf mix such as field rocket, chinese mustard, fennel and endive -all very easy to grow. It's also very easy to buy a bag of mix instead - but not quite so full of flavour! Add a tub of Waitrose seafood salad, with tasty octopus pieces, mussels, prawns etc in olive oil. Serve together with warm ciabatta bread and cold white wine - majestic and very continental! Can be a generous starter couse or a light midday meal.

    • 1 large tub of Waitrose deli counter seafood salad

      Bowl of mixed fresh salad including (but not limited to):

      Chinese mustard
      Mixed Olives

      Siccilian Olive Oil
      Ground fresh black pepper
      Juice of half fresh lemon

      Olive Ciabatta Bread


    1. Wash drain and chill salad mix. Can be done earlier in the day or even the day before and kept in an airtight bag in fridge. Place generous portion of salad on plate or bowl, spoon seafood mix on top, in centre. Drizzle olive oil, lemon juice over and grind fresh black pepper to taste. Serve with warm ciabatta bread and crisp dry white wine (still or sparkling).
