The three-ingredient dressing

3 tbsp tahini
½ orange, zest and juice
1 garlic clove, finely grated
1. In a small bowl, whisk everything together with 3-5 tbsp warm water, until smooth and the consistency of double cream. Season to taste.
Try using lemon juice instead of the orange, and stir in some chopped herbs (parsley or coriander are best) or a pinch of ground coriander, cumin or fennel seeds for an extra boost of flavour.
How to serve
Leafy greens love this dressing, as do chunky roasted vegetables such as cauliflower and aubergine. It also complements the richness of grilled lamb chops.
