A tiny bit of saffron goes a long way. It adds earthy, robust flavour and vibrant golden colour to soups, stews and rice dishes. Made from the vivid 'threads' in the centre of the crocus flower, saffron is harvested by hand and it takes roughly 75,000 crocus flowers to make one pound of saffron spice. Worth its weight, literally.
