Vegetable Tagine

This easy supper is a real health booster at just over 300kcal!! The best form of potato to use for this recipe is Maris Piper. This can be frozen once thoroughly cooled. Defrost before reheating.

  • •600g potatoes, diced (eg Maris Piper
    •1 tbsp vegetable oil
    •1 onion, diced into large pieces (250g)
    •2 carrots, thickly sliced (200g)
    •1 red pepper, thickly sliced (180g)
    •2 tsp Tagine Paste
    •400g tin chopped tomatoes
    •410g tin chick peas, drained and rinsed


  1. 1. Boil the potatoes for 5 minutes, then drain.
  2. 2. Heat the oil in a large frying pan and fry the onion, carrot and potato for 5 minutes. Add the remaining ingredients, cover and simmer for 10 minutes.
  3. 3. Serve with a sprinkling of chopped parsley and a dollop of yogurt.
