Warming winter sausage casserole

A hearty family one-pot dish

  • Total time: Approx 2hrs 20 min

Serves: 4


  • 1 large onion

    8 good quality pork sausages
    4 lambs kidneys, halved and core
    4 rasher lean back bacon
    1 400gm tin chopped tomatoes
    1/2 tsp veg. stock powder
    250ml water
    1 bruised bay leaf.
    1 tbs olive oil
    1 tsp cornflour


  1. Coarsely chop onion and cook in oil over gentle heat until softened. Place onions in casserole and brown sausages in remaining oil. Follow with kidneys and bacon, adding them to the casserole. Add tomatoes, stock powder, and enough water to just cover sausages etc. Tuck in bay leaf. Bring to boil then place in cool oven, 140* or simmering oven of Aga, for 2 hours.
  2. Thicken juices with 1tsp cornflour, slaked with 1 tbs water. Serve with mashed potatoes and veg. of choice.
