Mix the sweet potatoes and white parts of the salad onions with a pinch of salt. Scrunch together to release some moisture, then stir in the flour to create a thick, pliable mixture.
With wet hands, divide the mixture into 4 patties, around 2cm thick. Pour 1cm oil into a large frying pan over a medium-high heat. Add the patties and cook for 3-4 minutes each side, until golden and crisp. Drain on kitchen paper.
Meanwhile, mix the green parts of the salad onions, the beetroot, yogurt, lemon zest and juice together in a bowl with a pinch of ground black pepper.
Put the röstis on 2 plates, spoon over the creamy horseradish beets and flake the mackerel over the top. Add the watercress and the lemon wedges, then serve.
These potato röstis are also delicious with a weekend fry-up. For a cheat’s version, try a 300g pack potato röstis, cooked according to pack instructions.
