Smoked mackerel pasta salad

300g essential Waitrose Amori dried pasta
Zest and juice of 1 lemon
2 tbsp olive oil
1 tsp essential Waitrose Dijon Mustard
70g pack Waitrose Wild Rocket
1 essential Waitrose Courgette, sliced into thin ribbons (using a vegetable peeler)
250g essential Waitrose Smoked Mackerel Fillets, (skin, bones removed), flaked
1. Cook the pasta according to pack instructions then drain and cool under cold water.
2. Meanwhile, whisk the lemon zest and juice, olive oil and mustard together.
3. Mix the pasta, rocket, courgette and mackerel. Toss in the dressing then season.
