Take your homemade sushi to restaraunt level with a little help from Japanese rice vinegar. Mild and sweet, without the strong acidity of other vinegars, it's best warmed with sugar and salt before stirring into sticky rice. Dash it over thinly sliced cucumber or radish for a quick side pickle.
